Elto Coffee represents the work of Eliyas Dukamo and Atiklit Dejene, a partnership rooted in Sidama Bensa. Their vision is to express the full potential of Ethiopian terroirs through nano-lots defined by precision and complexity.

In collaboration with surrounding smallholders, the ripest cherries are selected and transformed through meticulous processing—balancing traditional craft with modern innovation. Each lot becomes a canvas for distinct expressions of Sidama, with methods like washed, natural, and honey reinterpreted to reveal new dimensions.

Varieties 74112 and 74110 originate from the Jimma Agricultural Research Center (JARC). Developed in 1974, the “74” denotes the year of selection, while subsequent numbers identify individual varietal lines, chosen for resilience and quality.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
