The Story Behind the Cup

The cherries for this lot are harvested every three weeks, then fermented in cherry for 24 hours before pulping. After pulping, they undergo a 36-hour fermentation in a traditional majolica tank before being washed and drained. Finally, the beans dry slowly over 18–22 days, ensuring a clean, complex cup profile.

This coffee represents the dedication of Yivier Quinayas, the second of the Quinayas siblings, who grew up in the Los Robles countryside surrounded by the rhythms of farm life. From a young age, Yivier balanced school with demanding responsibilities—gathering firewood, tending calves, and helping with daily work on the family farm.

His introduction to coffee came early. Working on a plot his father, Don Orlando, had given to the children, Yivier learned the value of responsibility and perseverance. At just 15, he planted his first 1,000 San Bernardo coffee trees, a project that taught him crop management, plant care, and planning for future harvests.

In 2021, Yivier’s commitment was rewarded when his father entrusted him with 1.5 hectares of land—complete with Caturra and Cogollo Morado varieties. Initially skeptical of specialty coffee, Yivier’s curiosity led him to learn about its benefits and intricacies. He soon embraced quality-focused farming, realizing that excellence depends on every detail—from variety and soil to fermentation and drying.

Today, Yivier continues to refine his practices, improve quality, and push for innovation. His story is one of resilience, curiosity, and evolution—proof that each generation can shape a stronger legacy in coffee.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
