INTRO
A carefully selected micro-lot from Datura's direct visit to Hacienda La Esmeralda — hand-chosen from the Trapiche lot on the Cañas Verdes farm as one of two standout expressions from the estate. Intensely floral, remarkably elegant, and refined: a washed Gesha processed through four days of cold anaerobic fermentation and slow-dried on raised beds. In the cup: lavender, bergamot, apricot, and violet.
THE PRODUCER
Hacienda La Esmeralda needs little introduction. In 2004, the Peterson family won the Best of Panama competition with their Gesha — a variety previously unknown in the region — setting the highest price ever paid for coffee at auction and fundamentally reshaping how the world understood specialty coffee. The estate spans several distinct farms across Boquete, each with its own character and elevation. Cañas Verdes is one of La Esmeralda's prized holdings, producing Gesha lots of exceptional florality and refinement that have become benchmarks for what this variety can achieve in the right hands and the right terroir.
THE PROCESS
The Washed Anaerobic Cold Fermentation process at Cañas Verdes involves:
🍒 Hand-picking — Gesha cherries carefully harvested at peak ripeness on December 23rd, 2025 🔒 Cold anaerobic fermentation — Cherries sealed in stainless steel tanks in a cold fermentation room for 4 days 🔧 Depulping — Outer skin removed after fermentation 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Slow raised-bed drying — Dried on raised beds for 10 days to optimal moisture content
The four-day cold anaerobic fermentation is the defining step — by fermenting in sealed stainless steel tanks at low temperature, the Peterson family build a concentrated floral and fruit complexity into the Gesha with exceptional precision, while the cold environment keeps the fermentation clean and controlled, producing the intensely elegant and refined character that defines this lot.
THE CUP
An intensely floral and deeply refined washed Gesha from one of La Esmeralda's most distinguished farms — lavender and violet florality of extraordinary delicacy, bergamot citrus refinement, and a soft apricot sweetness that lingers into a long, elegant finish. Hand-selected at the farm by Datura and slow-dried with care: Hacienda La Esmeralda at its most expressive.
