From the Vergara brothers' Peñas Blancas community project in Huila, this Profile Fermented Ombligon is an expressive and creamy espresso roast built on one of Colombia's rarest varietals. Precisely controlled fermentation unlocks the Ombligon's distinctive aromatic potential, delivering fresh raspberry vibrancy and a sweet dried apple finish with exceptional clarity and elegance in the cup.

THE PRODUCER

Jhoan and Diego Vergara first built their reputation through Finca Las Flores — a farm that has become one of Huila's most respected addresses for experimentally processed micro-lots. Off the back of that success, the brothers expanded their work to support neighbouring smallholder farmers through Peñas Blancas: a community project and processing hub where deep fermentation expertise and precision infrastructure are made available to the surrounding farming community, enabling neighbouring producers to access next-level quality processing and more equitable market pricing.

Ombligon — named for its distinctive navel-like indentation — is a rare Colombian variety prized for its extraordinary aromatic potential. It remains uncommon in commercial specialty coffee, making this lot a particularly rare opportunity to experience the varietal at its most expressive.

THE PROCESS

The Profile Fermented process at Peñas Blancas involves:

🍒 Hand-picking — Cherries selectively harvested at peak ripeness 🔍 Sorting — Only the finest ripe cherries selected before fermentation 🧪 Profile fermentation — A precisely controlled fermentation in which conditions, duration, and each phase are carefully monitored and managed 🌡️ Environmental control — Temperature, humidity, and fermentation activity tracked throughout to influence and define the flavour outcome ☀️ Drying — Coffee dried to optimal moisture content after fermentation

The profile fermentation is the defining step — by precisely managing each phase of fermentation rather than leaving it to chance, the Vergara brothers are able to amplify the Ombligon's inherent fruitiness, complexity, and sweetness while preserving the clarity and elegant structure that make this lot so compelling.
