THE PRODUCER

Nancy Mendoza is a third-generation coffee farmer in Cajamarca, growing on a small farm in Peru's northern highlands. A quality-focused producer, she cultivates Gesha — a variety she has adopted in pursuit of the complexity and value that this exceptional cultivar can unlock at altitude. Cajamarca is one of Peru's most celebrated coffee-growing regions, known for its remarkable flavour diversity, distinct microclimates, and a strong tradition of organic and transparent farming practices.

Gesha, originating from the Gesha forest of southwestern Ethiopia and celebrated globally for its extraordinary florality and aromatic complexity, thrives at the high altitudes of Cajamarca where slow cherry development and cool temperatures allow the varietal's full potential to express itself.

THE PROCESS

The Washed process at La Pomarosa involves:

🍒 Hand-picking — Cherries selectively harvested at peak ripeness 🔍 Sorting — Defective and underripe cherries removed before processing 🔧 Pulping — Outer skin and fruit flesh removed from the beans 🧪 Fermentation — Beans fermented to break down remaining mucilage 💧 Washing — Thoroughly washed to remove all fermentation residue ☀️ Drying — Dried to optimal moisture content, preserving clarity and structure

The meticulous washing and fermentation management is the defining step — stripping the processing back entirely to let La Pomarosa's terroir and the Gesha varietal's inherent character speak with full transparency and clarity.
