From the Adado Washing Station in Yirgacheffe — one of the most sought-after stations for specialty coffee buyers worldwide, and a name that has become synonymous with the clean, vibrant, and expressive naturals that have made this region so celebrated. At 2,150 MASL, slow cherry maturation and traditional cultivation methods combine with Adado's razor-sharp focus on quality to produce a natural Ethiopian of exceptional clarity. THE PRODUCER

Adado Washing Station, managed by Balese Dingu, sits in the famed Yirgacheffe region of Ethiopia — widely considered one of the finest coffee-producing areas in the world, and the place where Arabica coffee is believed to have first grown wild before spreading anywhere else. Most producers delivering cherry to Adado are smallholders who continue to cultivate using traditional methods passed down through generations — with no chemical fertiliser or pesticide use, and coffee that is entirely cultivated, harvested, and dried through manual systems. The result is coffees of exceptional purity and terroir-driven character that reflect both the land and the people who have farmed it for centuries.

Ethiopia's extraordinary biodiversity — with DNA testing confirming over 60 distinct varieties growing across the country — means that most Ethiopian coffees are blends of many co-existing heirloom cultivars, each contributing its own layer of complexity to the final cup.

THE PROCESS

The Natural process at Adado involves:

🍒 Hand-picking — Ripe heirloom cherries selectively harvested by smallholder producers 🔍 Sorting — Carefully sorted before drying to ensure only the finest ripe cherries proceed ☀️ Raised-bed drying — Whole cherries dried on raised beds, turned regularly to ensure even drying throughout

The raised-bed natural drying is the defining step — the beans rest inside the intact cherry throughout the drying period, slowly absorbing the fruit's sugars and developing the strawberry sweetness and nectarine depth that define this lot, while the careful sorting at intake ensures exceptional consistency and clarity in the final cup.
