Created in collaboration with J Skis, this roast captures the flow and precision of a perfect mountain descent, bringing that same energy into your morning cup. Designed to elevate your daily ritual, it’s rich, layered, and deeply satisfying whether you’re chasing fresh lines outdoors or savoring the quiet of home brewing.

This blend draws from Colombia and Ethiopia, two storied coffee origins that together offer complexity and depth in a dark-roast filter profile. The result is expressive — showcasing sweetness, fruit nuance, and roast development in harmony.


THE PRODUCER — Sourcing Across Continents

It’s All Downhill From Here reflects Onyx’s global sourcing relationships and experiential approach to coffee curation. From the high elevations of Colombia — where cooler temperatures slow cherry development and enhance sweetness — to the varied terroirs of Ethiopia, Onyx works with producers whose coffees each season bring compelling character and quality.

Rather than featuring a single farm or varietal, this lot embraces mixed microlots, celebrating diversity in bean genetics and processing styles. This approach allows Onyx to craft a roasted blend that’s expressive, multi-layered, and compelling in both aroma and taste.


THE PROCESS — Washed Clarity Meets Expressive Roasting

This coffee is built on a washed processing foundation — a method that cleans the parchment of mucilage and highlights structural clarity in the cup. After careful de-pulping and fermentation, beans are dried — often on raised beds — to ensure even airflow and balanced development.

Onyx then roasts this blend to an expressive dark level: enough development to bring out deeper sugars and molasses-like qualities, while preserving the origin complexity that makes specialty coffee sing.

What is the roast recency?

Onyx recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
