The Story Behind the Cup

We’re excited to share the second harvest of Luis Aguirre’s lot – and it’s even better than last year’s. When we first tasted his coffee, Luis was new to specialty production, and the variety was initially a mystery, suspected to be a hybrid. Thanks to genetic testing by LaREB, it’s now confirmed as Pink Bourbon (Rosado), one of the most celebrated varieties in Colombia.

This lot was sourced through LaREB – a producer-founded and producer-led cooperative of around 60 members. LaREB handles everything from quality control and shipping to warehousing and sales, ensuring that 80–90% of profits stay in Colombia. By removing intermediaries, they empower smallholder farmers like Luis to access the international market on fair terms.

Luis’s commitment to quality is evident in every step of processing: in-husk fermentation for 24 hours, followed by dry-mass fermentation in tank, and slow sun drying for a clean, complex profile.

We’re proud to support this sustainable, farmer-driven model – and to bring you a Pink Bourbon that shines with vibrancy and sweetness in every cup.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
