From Frank Torres at Finca La Indonesia in La Unión, Nariño — a washed Pink Bourbon of extraordinary clarity and sweetness from one of Colombia's most compelling and meaningful specialty farms. A 48 and 72-hour depulped dry anaerobic fermentation on sunbeds produces the kind of complex, layered elegance that reflects both Frank's deep technical expertise and over 40 years of family coffee heritage. THE PRODUCER

Finca La Indonesia is situated 90km from Pasto in La Unión — a community that, thanks to the efforts of producers like Frank Torres, has been transformed from an area associated with illicit trade and violence into a resilient and thriving specialty coffee community. The farm is a Torres family inheritance with over 40 years of coffee production history, and Frank now oversees all farming and processing practices on his inherited portion of the estate.

Frank's background is unusually wide-ranging for a producer: a Q Grader who began his coffee career in Starbucks' specialty programme before moving into green coffee buying for exporters and importers, his network of industry experience has allowed him to push the boundaries of processing in ways that set Finca La Indonesia apart. His continuous efforts to improve farming practices have taken 90% of the farm organic — a commitment to soil health and sustainable production that is as much about preserving the land for future generations as it is about cup quality.

Pink Bourbon is a variety primarily grown in Huila and Nariño, genetically identified as Ethiopian Landrace. At 1,750–1,850 MASL in La Unión's distinct mountain microclimate, its characteristic floral and fruit complexity thrives — and in Frank's precise, technically accomplished hands, the results consistently exceed expectations.

THE PROCESS

The Washed Dry Anaerobic process at Finca La Indonesia involves:

🍒 Hand-picking — Pink Bourbon cherries selectively harvested at peak ripeness 🔧 Depulping — Outer skin removed before anaerobic fermentation 🔒 First dry anaerobic fermentation — Depulped beans sealed in anaerobic conditions on sunbeds for 48 hours 🔒 Second dry anaerobic fermentation — A further 72-hour dry anaerobic fermentation phase on sunbeds 💧 Washing — Thoroughly washed after fermentation to remove all residue ☀️ Drying — Dried to optimal moisture content
