Intro

This is a Geisha you won’t forget long after the final sip. Elegant, expressive, and beautifully sweet, this natural-processed Colombian Geisha showcases just how compelling the variety can be outside of Panama. With a lively yet refined acidity and a layered aromatic profile, it’s a coffee that unfolds slowly and rewards attention—especially on filter.

The Producer

This lot comes from Finca El Mirador, located in the Tello area of Huila, a region celebrated for its diverse landscapes and ideal growing conditions. The farm sits at approximately 1,700 meters above sea level, where cooler temperatures slow cherry maturation and encourage complexity in the cup.

Producer Robinson Vera is deeply committed to quality, focusing on careful harvesting and thoughtful farm management. While Geisha is a demanding and sensitive variety, the conditions at El Mirador allow it to express its hallmark elegance, clarity, and delicacy. This coffee is a clear example of Colombia’s growing reputation for producing exceptional Geisha lots with a distinct sense of place.

The Process

This coffee is naturally processed, meaning the cherries are dried whole with the fruit intact. This method allows sugars and fruit compounds from the pulp to slowly migrate into the seed, enhancing sweetness, body, and aromatic depth.

Natural processing requires patience and precision—any misstep can overwhelm the cup—but when executed well, as it is here, it results in a coffee that is fruit-forward, creamy, and expressive without sacrificing cleanliness or balance.

In the Cup

The cup opens with juicy strawberries, followed by a bright yet gentle sweet lemon note—more lemon zest than sharp citrus. As the coffee cools, a refined black tea character emerges, adding structure and elegance.

The finish is smooth and comforting, rounded out by the creamy sweetness of nougat pralines, leaving a long, softly sweet aftertaste. What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
