About the Producer
Danilo Sanchez is the third generation of coffee growers in his family. He began planting his own coffee in 2009 and has since expanded his plots to five hectares, continuing a family tradition of quality and care. Coffee for Danilo is both passion and legacy—each harvest is dedicated to producing high-quality, flavorful coffee while navigating challenges like labor shortages and climate change.
Processing
Cherries are harvested at peak ripeness and undergo a 50-hour anaerobic fermentation in sealed plastic bags. After de-pulping, the coffee ferments for an additional 38 hours before drying under sunlight for 20–25 days, with a plastic cover to regulate temperature. The result is a syrupy, fruit-forward espresso with complexity and depth.
