A vibrant and beautifully layered Pink Bourbon, jammy and berry-like with notes of black currant, red grape, and cranberry. The sweetness is reminiscent of fruit preserves, while the acidity shines with clarity — a profile that’s both refined and refreshing. Clean, balanced, and lively from start to finish.
Processing
Ripe cherries are hand-picked every three weeks and undergo a 24-hour bag fermentation before being de-pulped. The coffee then experiences a 36-hour dry fermentation in tiled tanks, developing depth and complexity. After fermentation, the seeds are rinsed and drained for three hours, then slowly dried in solar dryers for 15–20 days, preserving the variety’s signature sweetness and structure.
About the Producer
Gloria’s story is one of courage, resilience, and transformation. Born in the vereda of Sevilla near San Agustín, she grew up picking coffee with her family and left school early to support herself. Over the years, she worked tirelessly alongside her husband, Alberto, to revive a neglected piece of land that would become Finca El Progreso.
Life took a difficult turn in 2020 when Gloria faced both personal and economic challenges amid the pandemic. Rather than give up, she began again — rebuilding her farm and home from the ground up. Guided by her neighbor and mentor Don Daniel Ortega, a pioneer of specialty coffee in Huila and a founding member of Monkaaba, Gloria began to transform her approach to coffee cultivation.
She replanted 2,000 Pink Bourbon trees and rejuvenated her existing Caturra plants, all while caring for her children and continuing her education — earning her high school diploma at age 35 through Colombia’s Pacifist Diploma program.
By 2023, Gloria officially joined Monkaaba, connecting her work to a network of forward-thinking producers committed to traceability, quality, and empowerment.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
