Intro:

Swerl is excited to present Carlos Cadena, a vibrant naturally processed coffee from Veracruz’s Cosautlán region. This lot celebrates juicy fruit sweetness and deep cocoa richness, showcasing the expressive potential of Mexican specialty coffee from one of its most dedicated producers.


The Producer:

This coffee comes from Carlos Cadena, a fifth‑generation coffee producer rooted in Cosautlán, Veracruz. His family has been working with coffee since the 1890s, and Carlos continues that deep legacy with a keen focus on quality and innovation. Through careful cultivation, varietal separation, and experimentation with processing techniques, he has grown into one of Mexico’s standout specialty producers, earning recognition and awards in national competitions.


The Process:

This lot is fully natural processed — ripe cherries are dried whole with the fruit intact, allowing sugars and aromatics to infuse the bean over an extended drying period. This method brings intense fruit sweetness and depth, while careful handling ensures clarity and depth of flavour in the cup.


The Cup:

In the cup, this coffee is bright, juicy and fruit‑driven. Ripe blueberries 🍇 lead with lush sweetness, followed by vibrant cranberries 🍒 that give lively acidity. Underneath, a rich cocoa 🍫 note adds warmth and balance — a combination that feels both playful and satisfying as a filter brew.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
