INTRO — A Rare Varietal, Beautifully Expressed

Yellow Caturra isn’t the easiest varietal to grow—its delicate structure and susceptibility to disease make it a challenge for many farmers. But when it’s done well, the payoff is extraordinary. This lot from Dominga Carrasco is a perfect example: a washed Peruvian coffee with striking florals, glowing acidity, and crystal-clear fruit character.

Working alongside the El Morito Producer’s Association, this lot represents both tradition and innovation in Cajamarca’s highlands.

THE PRODUCER — Dominga Carrasco & El Amanecer

At El Amanecer, perched at 1800 masl, Dominga and her husband Amado Flores have spent years refining the cultivation of Yellow Caturra. Despite the varietal’s demanding nature, Dominga’s success with it has been so notable that other farmers in El Morito have begun adopting it, inspired by her results.

Her meticulous approach—careful pruning, selective harvesting, and a deep understanding of the plant—makes this lot a standout representation of both producer mastery and regional potential.

THE PROCESS — Clean, Classic, and Highly Expressive

This is a traditional washed process with an emphasis on clarity and control. Cherries are:

  • 🌱 Hand-picked at peak ripeness

  • ⚙️ Depulped and washed using classic wet-milling techniques

  • 🌤️ Dried slowly, allowing sugars to concentrate and aromatics to shine

The result is a cup that is exceptionally clean yet layered with vibrant, complex fruit.

THE CUP — Florals First, Fruit Second, Elegance Throughout

From the first sip, this coffee offers punchy, high-toned florals, reminiscent of a freshly steeped cup of osmanthus tea. As it cools, the cup unfolds into deeper, brighter fruit tones.

Flavor Notes

  • 🌼 Osmanthus Tea — floral, aromatic, elegant

  • 🍯 Quince Jam — tart, textured, sweet-zippy acidity

  • Starfruit — clean, bright, lingering tropical finish

The finish is long, refined, and slightly sparkling—a gorgeous expression of Yellow Caturra at high elevation.

 

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
