SEY is delighted to present Colombia — Wilson Alba; Sierra Morena, 2nd Harvest, the latest selection from Wilson Alba’s exceptional Pink Bourbon microlot produced at Finca Sierra Morena in Huila. This second harvest of the season highlights SEY’s commitment to sourcing dynamic, terroir-driven coffees and translating their natural fruit clarity into elegant filter roasts that reward exploration.
This lot continues a long tradition of excellence from Wilson Alba, whose meticulous cultivation practices and seasonal focus produce some of southern Huila’s most compelling Pink Bourbon profiles — structured yet vibrant, sweet yet complex.
THE PRODUCER — Wilson Alba & Finca Sierra Morena
For over 15 years, Wilson Alba has worked alongside his brother Jose on their family’s Finca Sierra Morena, an eight-hectare estate in Las Mercedes, Palestina. With two hectares dedicated to Pink Bourbon and the remainder planted to other varieties like Tabi, Wilson’s farm consistently yields expressive and nuanced coffees that stand out for their balance and clarity.
Pink Bourbon — a varietal revered for its sweet fruit character and refined acidity — thrives in Huila’s fertile soils and cool mountain climate. Wilson’s deep regional knowledge and careful microlot management allow SEY to feature this lot as both an immediate sensory delight and a testament to thoughtful stewardship.
THE PROCESS — Washed with Precision & Patience
This coffee follows a classic washed sequence tailored to accentuate clarity, sweetness, and lifted fruit expression:
🍒 Selective Hand Picking — Only ripe cherries are accepted at peak maturity.
💧 Float & Sort — Cherries are floated and sorted to remove defects.
🫗 Depulp & Dry Ferment (24 hrs) — Initial fermentation helps clarify the fruit profile.
☀️ Raised Bed Drying (~30 days) — Slow, even drying on beds enhances balance and structural clarity.
