SEY is excited to present William Ortiz; La Cabaña, Pink Bourbon – Colombia, a bright and expressive washed coffee from Huila’s beloved Pink Bourbon varietal. This lot highlights the zesty citrus energy and gentle sweetness that make Pink Bourbon such an exciting expression of Colombian terroir — yielding a refreshing and layered filter cup that’s both engaging and elegant.
The Producer:
This coffee comes from William Ortiz, a rising producer in Pitalito, Huila. William is one of the newer voices SEY has partnered with in this dynamic coffee region, bringing fresh energy and thoughtful cultivation to his farm La Cabaña. While still early in his specialty coffee journey, his meticulous approach to varietals like Pink Bourbon and Chiroso has already resulted in standout lots. SEY looks forward to deepening their relationship with William and highlighting his coffees in future seasons.
The Process:
La Cabaña’s Pink Bourbon is crafted through an attentive washed process. Ripe cherries are hand‑picked at peak ripeness and floated to remove defects, then held in‑cherry overnight to deepen sweetness. After depulping, the beans undergo a 36‑hour dry fermentation before being washed clean and dried on raised beds until they reach ideal moisture (~10.5 %). This careful sequence preserves clarity while building layered aromatic complexity.

In the cup, William Ortiz’s Pink Bourbon offers a bright, fruit‑forward profile with lively character. Expect pink lemonade 🍋 acidity that dances across the palate, followed by rich strawberry preserve 🍓 sweetness that adds depth and balance. Gentle soft floral 🌸 notes linger on the finish, giving this coffee a refined and aromatic quality that evolves beautifully as it cools.

What is the roast recency?
SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
