Francy Burbano, Buena Vista New Season - Washed Pink Bourbon | Colombia

Harvest: August, 2025

Process: Hand-picked at peak ripeness. Floated to further remove defects. Held in cherry for 36 hours. De-pulped, then dry-fermented in parchment for an additional 48 hours. Washed. Dried on raised beds for 20–25 days.

About Francy Burbano

This washed Pink Bourbon lot was produced by Francy Burbano, a rising talent from San Agustín, Huila. While this is our first year working with Francy, her dedication to quality and precision is immediately evident. Her farm, situated at high elevation, consistently produces some of the finest coffees in the region, and she recently placed in her first Copa de Oro regional competition.

Francy’s work represents the best of what Huila has to offer: meticulous hand-picking, careful defect removal, and thoughtful fermentation practices that highlight the unique characteristics of Pink Bourbon. Her approach to micro-lot development emphasizes clarity, balance, and expressive fruit notes, giving this selection a distinctive and memorable profile.

This lot was created exclusively for SEY this season and showcases the elegance of a high-altitude washed Pink Bourbon—delivering sweetness, brightness, and a tea-like delicacy that is both vibrant and refined.

What is the roast recency?

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
