Process: Honey – Hand-picked exclusively at bright red ripeness, floated to remove defects, de-pulped quickly while leaving a small amount of mucilage intact, and dried on shaded beds for three days until moisture reaches ~10%.

This special honey-processed lot was created by Tamiru Tadesse Tesema, owner of Alo Coffee in Bensa, Sidama. Tamiru is one of Ethiopia’s most innovative coffee producers, with a proven record of excellence—his coffees have placed among the highest in recent Ethiopian Cup of Excellence competitions.

Tamiru’s work represents the best of what Bensa has to offer: precision, experimentation, and an unrelenting pursuit of quality. His approach to micro-lot development has reshaped the potential of Ethiopian coffee, giving small communities the opportunity to produce and showcase world-class lots with clear traceability.

This selection was crafted exclusively for us this year and showcases the rare beauty of a honey process from Bensa—a style that enhances sweetness and fruit depth while maintaining clarity and balance.

What is the roast recency?

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
