Crispilliano Contreras x Lost Origin, Lot #181, Washed Gesha | Panama

Altitude: 2,000 masl
Harvest: February 4, 2025
Process: Hand-picked at peak ripeness. Cherries were transported in a refrigerated truck to Panama City to the Lost Origin Lab and de-pulped immediately upon arrival. Fermented for 5.5 days at an average temperature of 14°C (57°F) in custom-built stainless steel tanks using yeast strains LOY-007P and LOB-001P, propagated by Lost Origin using cascara as a growth medium. Dried over 16 days in temperature- and humidity-regulated drying rooms.

This washed Gesha lot comes from Crispilliano Contreras’ high-elevation garden inside Barú Volcano National Park, Panama, and was processed in collaboration with Lost Origin. From the very first cupping, this lot stood out for its clarity, sweetness, and expressive complexity, showcasing the elegance and precision that both Crispilliano and Lost Origin are known for.
Crispilliano’s expertise represents the pinnacle of Panamanian coffee cultivation: meticulous care at every stage of production, from cherry selection to harvesting at 2,000 masl. Lost Origin’s lab-based processing—controlled fermentation with specialized yeast strains and precise drying conditions—enhances the coffee’s delicate floral and fruit characteristics while highlighting the unique terroir of Boquete.
This lot was created exclusively for us and represents the culmination of advanced coffee-making techniques applied to one of the world’s most celebrated varieties. It delivers a cup that is bright, vibrant, and layered with Jolly Rancher sweetness, candied citrus, green apple, and jasmine aromatics.

What is the roast recency?
SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
