SEY is excited to present El Diviso, Washed Aruzi, a distinctive washed coffee from the foothills of Huila. This lot marks SEY’s first collaboration with Ludivia Luna and showcases the expressive potential of the Aruzi variety — a mysterious and intriguing coffee cultivar that continues to surprise and delight with its aromatic complexity and delicate fruit character.
The Producer:
This coffee comes from Ludivia Luna, a producer working with the family‑owned El Diviso operation in La Plata, Huila. While SEY has only just begun working with Ludivia this season, her dedication to quality and meticulous handling of this rare Aruzi selection has impressed the roastery team. SEY has historically released only a handful of Aruzi selections, and this lot highlights both producer care and varietal curiosity — raising excitement for future seasons.
The Process:
This lot undergoes a meticulous washed process designed to accentuate clarity and build nuanced fruit expression. After being hand‑picked at peak ripeness, cherries are floated to remove defects and then held in‑cherry overnight to deepen sweetness. The fruit is depulped and dry fermented for 36 hours, allowing initial development of natural sugars and aromatics. After a thorough water wash, the coffee is dried slowly on raised beds until it reaches approximately 10.5 % moisture, giving the cup brightness, balance, and refined clarity.
The Cup:
Bright, juicy, and nuanced. Ripe plum 🍑 sweetness leads with a soft syrupy texture, followed by crisp white grape 🍇 notes that add elegance and laser‑like clarity. Hibiscus floral 🌺 highlights lend a delicate perfume and lift to the finish — making for a refreshing yet structured filter coffee that evolves beautifully from first sip to finish.

What is the roast recency?
SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
