Intro

DOS PINOS marks our first year working with producer Jhonatan Pito, and it immediately made an impression. When we first encountered this coffee on the buying table, its clarity and balance stood out right away—an articulate, expressive Pink Bourbon with excellent structure and precision. It’s a coffee that feels intentional and confident, offering both brightness and depth in equal measure.

The Producer

This coffee comes to us through a completely new supply channel, part of our ongoing effort to deepen and diversify our sourcing in southern Huila. As we continue exploring the region, we’re finding that some of the most exciting coffees emerge from new relationships like this one. While quality naturally varies from harvest to harvest, we remain deeply committed to Huila’s potential and to highlighting the seasonal diversity that makes each year distinct. Jhonatan Pito is a producer we’re excited to continue learning from.

The Process

Cherries are hand-picked at peak ripeness and floated to remove defects before resting overnight in cherry. The coffee is then depulped and dry-fermented for 50 hours, allowing sweetness and acidity to develop with control and intention. After fermentation, the coffee is fully washed and dried on raised beds until it reaches a final moisture content of 10.5%, preserving clarity and structure.

In the Cup

The cup opens with bright, juicy tangerine acidity, clean and well-defined. A smooth honeyed sweetness follows, giving the coffee weight and warmth, while blueberry notes add depth and a subtle fruit complexity. The structure is elegant and composed, with a clean finish that showcases the washed process and the refined character of Pink Bourbon. It’s a balanced, expressive coffee that rewards careful brewing and highlights the strengths of its origin and producer.

What is the roast recency?

SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY  typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
