Process: Hand-picked at peak ripeness. Floated to further remove defects. De-pulped. Grade 1 density separated. Fermented underwater for 36 hours. Dried on raised beds for 10–14 days.
About Gerbota
This washed Ethiopian Landrace lot comes from the Gerbota site, high in the hills of Gedeo, Yirgacheffe. This is our first year working with this site, and the lot immediately impressed us with its clarity, sweetness, and expressive character. The Gerbota site is known for its high-altitude coffee production, where careful hand-picking, density sorting, and precise fermentation practices bring out the best of the native Ethiopian varieties.
Gerbota’s work represents the very best of Yirgacheffe: a combination of meticulous processing, attention to detail, and a focus on producing coffees that highlight the natural sweetness and complexity of Ethiopian Landrace varieties. This selection was created exclusively for us this season and showcases the elegance of a washed Ethiopian Landrace—bright, floral, and layered with nectarine, bergamot, and wildflower honey notes.

What is the roast recency?
SEY doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, SEY typically roast light.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
