Sweet like candy, Lollipop is truly unlike any decaf. From the first sip, it bursts with the flavour of Swedish berries and tart raspberries, wrapped in the juicy sweetness of ripe cherry. The mouthfeel is silky and full, with a lingering, sweet finish that leaves a lasting impression.

This decaf embodies the playful, nostalgic joy of a red lollipop, with all the depth and clarity of a world-class Colombian coffee.

ABOUT THE PRODUCER

El Paraíso and the Bermudez family are pioneers of innovation in coffee processing. Led by Diego and Alex Bermudez, the team has redefined precision fermentation in coffee. Instead of traditional anaerobic tanks, they employ custom-designed bio-reactors, allowing them to measure and control time, temperature, pH, sugar content, and microbial load with scientific accuracy.

Their work has made them global leaders in coffee processing, known for producing clean, expressive, and technically flawless coffees that push the boundaries of what’s possible in flavour development.

PROCESSING

This decaffeinated lot begins with the precise harvesting of perfectly ripe cherries. The coffee undergoes a semi-washed culturing process inoculated with Saccharomyces cerevisiae yeast, developing layers of fruity complexity and sweetness.

Following fermentation, the lot is decaffeinated using sugarcane-derived ethyl acetate (EA) — a natural solvent that preserves flavour integrity while removing caffeine. The result is a vibrant, fruit-forward decaf that’s as sweet and satisfying as any full-caf counterpart.

What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
