September is thrilled to present Letty Bermudez Colombia Gesha, a truly expressive and sweet single‑origin coffee named in honour of Diego Bermudez’s daughter. This exceptional Geisha lot brings together intense tropical sweetness, delicate floral aromatics, and crisp citrus brightness, all amplified through innovative processing that pushes the boundaries of washed coffee expression.


The Producer:

This coffee is from Diego & Alex Bermudez of Finca El Paraiso in the Cauca region of Colombia, producers widely known for their experimental and highly precise fermentation work. Diego is recognised in specialty coffee circles for pushing processing techniques — using controlled bio‑reactor fermentations with strict monitoring of temperature, pH, sugar levels, and microbial cultures to drive complex flavour development. Their commitment to innovation has positioned them as leaders in coffee processing science.


The Process:

Letty Bermudez uses a Double Anaerobic + Thermal Shock Washed process: cherries are harvested at peak ripeness with high sugar content, then fermented under both aerobic and anaerobic conditions with selected tropical yeasts to enhance fruit complexity. After mucilage breakdown, beans undergo a thermal shock wash — rapid temperature fluctuations to “fix” flavours — followed by careful drying in controlled conditions to preserve delicate notes and prevent over‑oxidation. This process results in a cup that is both structured and exquisitely sweet.


The Cup:

In the cup, Letty Bermudez is an elegant and richly layered Gesha. The first impression is intense peach candy sweetness 🍑 — reminiscent of juicy, sugar‑kissed fuzzies — balanced by bright citrus zest 🍋 and delicate floral 🌼 aromatics. What is the roast recency?

September doesn't generally advertise a roast preference to Filter or Espresso, however, this is an exception and this particular bag is best enjoyed as espresso!

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
