The Producer:
Eyder Martinez is a longtime collaborator with September and a biochemical engineer who influences both cultivation and processing alongside his work with El Paraiso. For this lot, he worked closely with the Cabildo Aponte community — a network of growers in Aponte — to produce a coffee that’s rooted in agricultural care and thoughtful post‑harvest handling at extreme elevations.
The Process:
This lot uses a traditional washed processing method that starts with meticulous hand‑sorting and depulping of ripe cherries. After fermentation, the beans are thoroughly washed to remove the mucilage and then dried with care to preserve acidity, sweetness, and clarity.
