About This Coffee

This marks Prolog's fifth year collaborating with the small group of farmers contributing to the Roble Negro Wet Mill, and it continues to be a pleasure to work alongside Jorge Vasquéz, the wet mill manager and largest cherry contributor. His Red Catuai naturally-processed lot is the highlight of our partnership.

The Roble Negro Wet Mill is known for its high quality standards and sustainability practices, drawing water from protected natural springs and freshwater sources within forested areas. The farm sits at the transition between the Pacific side of Costa Rica and the Central Valley, spanning 1,750–2,000 meters above sea level, providing ideal conditions for high-altitude coffee cultivation.

This Red Catuai Natural is fun and expressive yet elegant. The cup offers a vibrant structure, with winey acidity, juicy stewed red berries, and a subtle toffee-like sweetness. Balanced and approachable, it showcases both the care of Jorge and the terroir of Tarrazú, making it a playful yet refined coffee for filter or espresso.

What is the roast recency?

Prolog doesn't advertise a roast preference to Filter or Espresso, instead they are roasted for the best amongst both - often called Omniroast. That being said, Prolog typically roast light.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
