'We’re delighted to share the return of our annual Holiday release — a joyful, crowd-pleasing coffee that captures the spirit of gathering. This year’s offering comes from METAD, our closest relationship in Ethiopia. Roasted to a deep, developed medium profile, this coffee expresses rich cocoa foundations layered with notes of spiced berry compote and a lingering sweetness reminiscent of warm cobbler. It’s a versatile cup, nuanced enough for the coffee nerds, yet comforting and approachable for those who take theirs with generous cream and sugar. (looking at you, in-laws.)'


ABOUT THE REGION

Set in Ethiopia, Framily is sourced from METAD, a family-operated estate with a legacy rooted in Harar. The Hambela estate, gifted to Muluemebet Emiru — Africa’s first female pilot — in 1934, lies in a high-altitude region where slow cherry maturation and rich volcanic soil produce coffees of remarkable clarity and sweetness. The surrounding farms benefit from a harmonious environment, combining traditional practices with careful attention to the cycles of nature, resulting in coffee that reflects both the land and the dedication of its growers.

METAD works closely with local smallholders, ensuring meticulous hand-picking, fermentation, and drying on raised beds, creating beans that capture the essence of Ethiopian Landrace varieties. This combination of heritage, altitude, and careful cultivation gives Framily its expressive floral and fruit-forward character.


PROCESSING

This coffee is dry washed. After harvesting, the cherries are depulped and fermented in a dry environment for 24 hours, followed by a channel wash. The parchment coffee is then dried on raised beds for about 15 days. This method produces a clean and well-balanced cup, with subtle floral and tea-like notes, and minimal signs of fermentation, allowing the origin and variety to shine.


THE CUP

Framily offers a rich and layered experience, with a deep cocoa foundation complemented by notes of spiced berry compote and a lingering sweetness reminiscent of warm cobbler. The cup is versatile and approachable, perfect for both filter and espresso extraction. It is nuanced enough to delight coffee enthusiasts while remaining comforting for those who enjoy a smooth, satisfying cup with or without milk. The flavors are rounded, balanced, and beautifully expressive, reflecting the care taken at every stage from farm to cup.


What is the roast recency?

Onyx recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
