FINCA CONCEPCIÓN sits in the highlands of Mataquescuintla, Jalapa, with roots tracing back to 1890. Originally a cattle farm, it was transformed into a coffee estate by the Braun Valle family - a legacy shaped over generations. Since 2019, Gesha has been cultivated alongside the farm’s traditional Bourbon varieties.
Agricultural practices at Concepción are rooted in sustainability. Pruning takes place in April, with three fertilisations annually and foliar treatments applied with care. Shade is managed without herbicides, and all pulping water is reused - reducing environmental impact and maintaining soil health.
THE PROCESS
Washed. Cherries are selectively handpicked at peak ripeness, pulped, and fermented for 36 hours. After washing and a soak, the parchment is dried on cement patios over 15 days. Coffee is laid out in 18 cm layers and turned regularly to ensure uniform drying.
The result: a clean, complex, and aromatic cup - a clear expression of place and variety.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-10 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 10). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
