This washed Red Pacamara from Las Moritas is a classic, comforting cup with depth and elegance. Balancing ripe fruit sweetness with chocolatey richness.

The Process

This lot is fully washed, a method that emphasises clarity and balance. Ripe cherries are harvested selectively, depulped shortly after picking, and fermented before being thoroughly washed. The coffee is then dried carefully to preserve sweetness and maintain a clean, transparent profile that highlights both fruit and cacao notes.

In the Cup

The cup opens with juicy cherry-like sweetness, followed by layers of sweet chocolate and mixed berry notes. The body is smooth and rounded, with a gentle acidity that keeps the profile lively without overpowering the pallette

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
