Hydrangea is excited to present Sudan Rume Natural from La Isabela, a vibrant and rare coffee from Costa Rica’s West Valley. This lot highlights the extraordinary character of the Sudan Rume varietal — a prestigious heirloom with a reputation for expressive aromatics and compelling complexity — brought to life through natural processing that enhances fruit sweetness and syrupy depth.


The Producer:

This coffee is grown and processed by Max Salazar at Finca La Isabela, a farm in the West Valley known for thoughtful cultivation and quality‑focused microlots. Max continues a family legacy of coffee farming that balances eco‑conscious practices with meticulous attention to cherry ripeness and post‑harvest care — essential for preserving the delicate character of rare varietals like Sudan Rume.


The Process:

Hydrangea’s Sudan Rume is processed using a natural method, where fully ripe cherries are dried whole. This approach allows the bean to absorb fruit sugars and aromatics directly from the cherry, intensifying sweetness and body. Carefully managed drying under sun‑lit conditions brings out rich fruit‑driven layers and spice complexity, while preserving brightness.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
