ABOUT THIS COFFEE

Before he ever planted his first coffee tree, Getachew Zeleke was an accountant, quite literally a bean counter. After years of saving from his accounting work, he purchased land in Addis Ababa as an investment. When the real estate market surged in 2008, he sold that land and used the proceeds to buy a farm in Shakisso. By 2009, he had begun planting coffee.

This was the beginning of Dimtu, long before it became one of Guji’s most respected specialty operations. Getachew began by harvesting from his own young trees and buying cherries from nearby outgrowers, selling dried cherry through the ECX system.

In 2016, driven by a desire to focus on specialty coffee, he registered Dimtu PLC, built his own washing station, and shifted fully toward high-quality production. Still unsatisfied with the speed and consistency of commercial dry mills, he built his own dry mill, gaining full control over the quality chain from cherry selection to export.

This extreme level of detail, discipline, and transparency is why Getachew’s coffees stand out — and why working with him is such an honor.

THE CUP

A stunning washed Guji with crystalline clarity. Expect white peach sweetness, iced-tea–like smoothness, and bright citrus that lifts the entire cup. Clean, refreshing, and beautifully layered — a perfect expression of high-altitude Ethiopian washed coffee handled with precision.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.


What does 'Filter' or 'Espresso' Roast mean?

Typically filter is roasted lighter than espresso, though this is not always the case. Several factors play into what brands a Manhattan coffee as 'filter' or 'espresso', which includes the roast profile - i.e. how the beans are roasted, not just how developed a roast it is. It doesn't preclude you from using the beans for espresso though!
