Intro:

DAK Coffee Roasters is delighted to present White Petal, a refined and elegant single‑origin coffee from the Cajamarca region of Peru. This washed Geisha lot is exceptionally clean and expressive, offering a delicate yet lively profile that shines when brewed as a filter — a true celebration of terroir and varietal finesse.

The Producer:

Maximiliano Garcia is a respected grower based near El Huabo in Cajamarca, a region known for producing some of Peru’s most expressive and floral coffees. His careful cultivation and selective harvesting help ensure the cherries used for this lot are picked at optimal ripeness, laying the groundwork for a coffee that balances purity with vibrant flavour.

The Process:

This lot is processed using a traditional washed method, which emphasizes clarity and transparency of flavour. After hand‑picking ripe cherries, the coffee is depulped and fermented to remove mucilage, washed clean, and dried gently under controlled conditions. This approach preserves floral aromatics and bright acidity, while allowing the true character of Geisha to come through in the cup.

The Cup:

In the cup, White Petal unfolds with refined, aromatic clarity. Refreshing lemon 🍋 zest brings vibrant acidity up front, while delicate jasmine 🌼 florals add an elegant perfume. Underlying it all, a gentle raw honey 🍯 sweetness rounds out the profile with soft, lingering sweetness — creating a bright, nuanced, and balanced filter coffee.

Overall:

DAK’s White Petal is a beautifully defined and expressive coffee that highlights the potential of Geisha when grown and processed with precision. With its floral lift, citrus brightness, and honeyed sweetness, it’s a memorable filter coffee experience that rewards careful extraction and slow sipping — ideal for those who appreciate clarity, finesse, and layered complexity in every cup.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
