DAK Coffee Roasters is delighted to present Sprinkles, a playful and experimental filter coffee that celebrates the roastery’s sixth anniversary with a burst of expressive fruit‑forward flavour. Sourced from Finca Anaya in Colombia’s Huila region and crafted with a yeast‑enhanced natural process, this lot is all about fun, nostalgia, and bright character.


The Producer:

This coffee comes from Finca Anaya, a notable origin in Huila known for producing high‑quality natural and experimental lots. DAK returns to this farm again and again not only to purchase outstanding coffees, but to explore and learn through new processing methods. Their ongoing relationship with Finca Anaya reflects a mutual passion for curiosity, craftsmanship, and pushing the boundaries of flavour expression in specialty coffee.


The Process:

Sprinkles is processed using a yeast‑inoculated natural fermentation — meaning ripe Sidra cherries are dried whole after being inoculated with carefully selected yeast strains. This technique encourages a deeper development of fruity and aromatic compounds during fermentation and drying, enhancing sweetness and complexity while retaining a creamy mouthfeel. The light roast further highlights the distinct characteristics brought out by this processing style.


The Cup:

In the cup, Sprinkles delivers a vibrant and playful flavour profile. Expect bright, juicy pineapple juice 🍍 notes up front, followed by creamy fruit yogurt 🍦 nuances that add a silky sweetness. A lingering candy 🍬‑like sweetness rounds out the finish, creating a fun, nostalgic experience that’s both lively and comforting.

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
