Intro
We don’t source decaf often—but when we do, it’s because the coffee truly earns its place. This Ombligon from Colombia completely redefines what decaf can be: expressive, playful, and packed with fruit-forward sweetness. Process-driven yet beautifully balanced, this is a decaf that never feels like a compromise.
The Producer
This lot comes from Néstor Lasso, one of Colombia’s most forward-thinking producers and a master of experimental fermentation. Based in Huila, Néstor is known for pushing boundaries while maintaining clarity and intention in the cup. Even when working with decaffeinated coffees—a category often overlooked—his attention to detail and innovation shines through.
The Process
This coffee begins as an anaerobic natural, undergoing a highly controlled, multi-stage fermentation. Whole cherries move through alternating phases of aerobic oxidation and anaerobic fermentation, before finishing with a mosto fermentation and a final thermal shock to lock in aromatics and structure. After drying, the coffee is decaffeinated using Colombia’s Sugar Cane (EA) Process, where naturally derived ethyl acetate gently removes caffeine while preserving sweetness, fruit character, and clarity.
In the Cup
Juicy and indulgent, the cup bursts with raspberry coulis and ripe strawberry, layered with a crystalline sugar-like sweetness that carries through the finish. It’s vibrant, silky, and unmistakably fun—proof that decaf can be just as exciting, complex, and satisfying as any caffeinated coffee.
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
