This blend is a celebratory expression of innovation, growth, and connection, crafted to capture the spirit of a champagne toast in coffee form. Bringing together exceptional lots from five Colombian producers, it showcases advanced processing techniques and vibrant flavor design as the guiding force. Bright, floral, and effervescent in character, this coffee is meant to feel special, uplifting, and worthy of raising a mug to moments both big and small.

The Producer

This coffee is a collaborative blend featuring five exceptional Colombian producers: Oscar Hernández, Rodrigo Sanchez, Jhoan Vergara, Huver Castillo, and Sebastian Ramirez. Sourced from the Antioquia, Huila, and Nariño regions, each producer contributes a distinct lot shaped by innovative processing and deep regional expertise. Together, their combined craftsmanship highlights the diversity, creativity, and world-class quality of modern Colombian coffee.

The Process

This coffee is a blend of multiple lots, each produced using advanced and varied processing methods. The components include anaerobic fermentations, co-ferments, honey processes, and other experimental techniques, carefully selected to emphasize vibrancy, florality, and bright acidity. By combining these diverse processes, the blend achieves a layered, expressive profile that feels sparkling and dynamic, while remaining balanced and cohesive in the cup.

Take a Sip

Bright and lively on the palate, this coffee opens with layers of complex citrus and delicate white florals. A wine-like acidity reminiscent of sauvignon blanc adds a crisp, refreshing lift, while a playful sweetness emerges toward the finish, echoing notes of peach rings. Light in texture and vibrant throughout, the cup feels sparkling, elegant, and celebratory from first sip to last.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
