MEET THE PRODUCER
Brayan Alvear is a talented young coffee producer from Colombia—in fact, he might just be the youngest producer to headline our single origin menu. Born and raised in the rural town of Acevedo, Brayan’s father began teaching him about coffee when he turned 13. By age 20, he coordinated a project involving 60 coffee growers in the San Adolfo region, collecting and selling coffees in cherry from some of the most remote locations in the area.
Despite navigating life as a brand-new parent, Brayan’s personal and professional journey demonstrates his remarkable tenacity and determination. His recent achievements in co-fermentation further add to the legacy he is building in Colombia’s specialty coffee scene.
TRUST THE PROCESS
This coffee is a blend of two coffees from Brayan’s careful hands: Rocket Flower and Watermelon. Whole coffee cherries are co-fermented with ground, dehydrated fruit—citrus fruits for Rocket Flower, and (at the risk of stating the obvious) watermelon for the latter. After fermentation, the coffee is dried in mechanical dryers for 10 days until optimal moisture content is achieved, resulting in a harmonious and well-balanced cup that highlights both the fruit additions and the natural sweetness of the coffee.

Supremely fresh, floral, and vibrant, this coffee is downright spring-like. Its fruit flavors are bright and playful, like chewing a stick of watermelon bubble gum. Aromatic like white flowers and vibrant like complex citrus, every sip reminds you that warmer days and new beginnings lie ahead.
What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 6-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12 - should we have any left in stock!). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
