This lot comes from the Anasora washing station in Shakiso, Guji, growing the 74110 and 74112 varieties at 1,900–1,950 masl.
THE PROCESS
This lot is an Anaerobic Natural — cherries ferment in a sealed, oxygen-restricted environment before drying whole. What makes this lot exceptional is its clarity: despite the anaerobic processing, it doesn't mask the origin, instead beautifully preserving the vibrant, crisp terroir of the Shakiso region and the distinct character of the 74110 and 74112 varieties.
The precisely controlled anaerobic fermentation is the defining step here — it's what delivers juicy apricot and exotic guava intensity without tipping into the heavier funk typical of the process, finishing with a beautifully perfumed honeydew aftertaste.
