Excelsa from India — unexpected, expressive, and full of character.
Grown across the forested slopes of Coorg, this rare Excelsa lot is a collective effort, with cherries sourced from four local farms, including the Srirangalli community. Though Excelsa trees have long stood along the borders of many Indian estates, they’re seldom processed with the kind of attention and innovation found here.
At the centre of this lot is Mooleh Manay Estate, a pioneering farm near the Harangi Reservoir, now managed by Komal and Akshay, who took over from 4th-generation coffee grower Ms. G.G. Padmashree. The estate embraces a progressive, data-driven approach to agriculture — reviving forgotten coffee genetics, experimenting with new grafts and fermentation techniques, and building climate resilience through healthy soil and biodiversity.
For this lot, ripe Excelsa cherries were hand-picked, floated to remove underripes, and briefly pre-dried on raised beds before being sealed in anaerobic tanks. Fermentation was inoculated with Saccharomyces cerevisiae yeast for 84 hours, producing an exceptionally sweet, spiced, and aromatic cup unlike any other Indian coffee we’ve tasted.

What is the roast recency?
We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
