ABOUT THE COFFEE

The return of a classic: /025 marks the comeback of our washed Ethiopian staple, now sourced from the Single Farmer Project, a pioneering initiative that brought true farm-level traceability to Ethiopia. Established in 2012, this project gives visibility to individual producers, strengthening transparency and long-term sustainability in one of coffee’s most storied origins.

This lot comes from Mr. Ocholo Bedecho, a dedicated farmer from Haro Wachu in the Guji Zone. His 8-hectare farm—large by Ethiopian standards—supports his family of eight children, who balance school and helping on the land. Beyond coffee, Mr. Bedecho cultivates vegetables and Enset for food security, but coffee remains his core livelihood and passion.

Grown in Guji’s fertile red volcanic soil at high elevations, the native heirloom varieties here develop incredible complexity. The result is a cup that embodies the elegance and purity that define washed Ethiopian coffees—clean, structured, and deeply aromatic.

THE CUP

This coffee is a study in balance and clarity: a bright, layered washed Ethiopian that feels both timeless and personal. Expect fragrant bergamot and jasmine florals intertwined with a silky black tea body. The acidity is crisp and citrus-like, while the finish lingers clean and floral.

What is the roast recency?

We recommend brewing with beans that are at least two weeks off roast. All beans are roasted to peak flavour at around 8-12 weeks. We have the option to either purchase standard beans (at least 2 weeks but no longer than 6 weeks off roast), or rested beans (at least 7 weeks off roast, no longer than 12). For peak flavour, if you are looking to use immediately, we recommend purchasing the rested beans. If you are adding to your rotation of beans, we recommend purchasing the standard and allowing the beans to naturally rest and mature whilst you rotate through other beans.
