THE PRODUCER
Darío Rodríguez has been farming Finca El Recreo in Gigante, Huila since 1975 — half a century of dedication to the land that speaks directly in the cup. His farm sits at 1,670 MASL in one of Colombia's most celebrated coffee-growing regions, where the volcanic soils, stable mountain microclimate, and cool temperatures of Gigante provide ideal conditions for Pink Bourbon to develop the vivid fruit character and refined sweetness that define this lot.
Pink Bourbon is a variety grown primarily in Huila, genetically identified as Ethiopian Landrace and belonging to the Core Ethiopia group alongside Gesha, Chiroso, Sidra, and Aji. Prized for its bright, sweet, and aromatic profiles, it responds particularly well to a carefully controlled extended fermentation — the 40-hour protocol Darío applies here building the orange and apricot fruit clarity and raspberry brightness that define this cup.
THE PROCESS
