Juan Jiménez is one of SEY's most trusted and enduring producer relationships in Huila — a farmer who consistently places in the top ten of the Copa de Oro competition, an event that connects roasters and buyers with producers who might otherwise remain difficult to reach through conventional market channels. His work at El Porvenir in Santa Barbara, Palestina has established him as one of southern Huila's most reliable sources of exceptional Pink Bourbon, and his multi-stage drying protocol reflects the level of care and precision that has kept him at the top of the competition rankings season after season.
Pink Bourbon is a relatively new variety grown primarily in Huila, genetically identified as Ethiopian Landrace — belonging to the same Core Ethiopia group as Gesha, Chiroso, Sidra, and Aji. Its precise genetic origins remain under investigation as the global database grows, but the vivid citrus brightness, floral complexity, and distinctive fruit character it consistently delivers at altitude in Huila are unmistakable.
THE PROCESS
The Washed process at El Porvenir involves:
🍒 Hand-picking — Cherries selectively harvested at peak ripeness 💧 Flotation — Floated to remove defects before processing ⏳ In-cherry hold — Whole cherries held overnight before de-pulping 🔧 De-pulping — Outer skin removed after the resting period 🧪 Dry fermentation — Fermented dry for 48 hours 🌬️ Mechanical drying — Dried for 24 hours in a mechanical dryer maintained at 20–30°C 🔒 Stabilisation — Sealed in GrainPro bags for one week to stabilise moisture distribution 🌬️ Finishing — Returned to the mechanical dryer until moisture content reaches 10%
The multi-stage drying and stabilisation protocol is the defining step — a 24-hour mechanical dry followed by a week of sealed stabilisation and a final mechanical finish ensures an exceptionally even and consistent moisture distribution throughout the lot, preserving the bright citrus clarity and delicate floral character of the Pink Bourbon while extending shelf life and stability.
