THE PRODUCER
Dwight Aguilar Masias has become one of Peru's leading specialty coffee producers over recent years, earning international recognition through consistent top placements at the Cup of Excellence and playing an important role in advancing Peru's reputation as a serious specialty origin. Finca Nueva Alianza is situated in Santa Teresa, Cusco — a region that, alongside the Incahuasi and Amaybamba valleys, is establishing itself as one of Peru's most compelling high-altitude growing areas. This is SEY's first year working with Dwight's coffees, a relationship they are honoured to begin.
Red Gesha is a colour selection of the celebrated Gesha variety — first collected from the coffee forests of Ethiopia in the 1930s, distributed through research stations in Tanzania and Central America before arriving in Panama in the 1960s, and brought to global prominence at the 2005 Best of Panama competition. At 1,900 MASL in Cusco, the variety's hallmark jasmine florality and citrus brightness find the cool temperatures and slow cherry development that allow them to express themselves with full precision and elegance.
THE PROCESS
The Washed process at Finca Nueva Alianza involves:
🍒 Hand-picking — Red Gesha cherries picked at peak ripeness ⏳ 24-hour in-cherry hold — Whole cherries held for 24 hours before processing 💧 Flotation — Floated after the hold to remove defects 🔧 De-pulping — Outer skin removed after flotation 🧪 Dry fermentation — Dry-fermented for 36 hours ☀️ Raised-bed drying — Dried on raised beds for 20 days until moisture content reaches approximately 10%
The 24-hour in-cherry hold before flotation is a distinctive step — allowing the cherries to rest before depulping builds an additional layer of aromatic complexity into the Red Gesha's profile, while the subsequent 36-hour dry fermentation and 20-day raised-bed drying develop and preserve the jasmine florality, lychee sweetness, and honeydew freshness that define this cup.
