INTRO Ruby Rush Espresso is a berry explosion with balanced acidity and a silky body — sweet and juicy, intentionally roasted for espresso and milk espresso. Cherry nibs, stewed berries like raspberry, blueberry, and strawberry, and a creamy caramel finish. In the cup: cherry nibs, sweet red berries, and creamy caramel.

THE PRODUCER This is a field blend combining microlots from local producers across the Huila region, brought together under the Las Perlitas name.

THE PROCESS Coffees are processed using the "Cochadas" method — every 4 to 7 days, a new picking is de-pulped into the previous days' coffee and homogenised together. On the final day, the coffee is washed and prepared for drying. The majority of this lot ferments in water, creating a cleaner profile without excess funk or undesired attributes compared to other fermentation methods.

The cumulative, water-fermented Cochadas approach is the defining step — it's what builds the clean, sweet berry character and creamy caramel finish that define this cup, ideal for both black and milk espresso.

THE CUP Silky and sweet — cherry nibs and stewed berries (raspberry, blueberry, strawberry) throughout, with a creamy caramel finish that lingers long. Built specifically for espresso and milk-based drinks.

About this variety

This is a mixed or locally selected coffee population rather than one precisely identified variety. Expect the lot’s tasting notes to be more useful than a single variety stereotype.

Why this one is different
  • Colombia
  • Huila
  • 2100 masl
  • Washed

In Colombia, local selection, replanting and farm history can shape a mixed population over many generations.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Several plant types may be growing and harvested together, often reflecting a farm or region’s planting history.

Classification Mixed population

Technical lineage The individual plants are not fully separated or identified, so a single genetic lineage would be misleading.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
