INTRO
A first-time feature for the Nensebo Refisa washing station — floral and stone fruit-forward, reminding us of black tea and peaches. In the cup: black tea, stone fruit, and lemon tea.
THE PRODUCER
SNAP Specialty Coffee is a coffee collective based in Addis Ababa, running three coffee washing and processing stations in Chelelekty, Kochere District of Gedeb Zone, alongside partnering stations in Uraga (Guji) and Nensebo. These stations allow local outgrowers to process and export their lots worldwide. Coffees in this lot are cultivated in Roricho, Bulga, and Solena — Nensebo itself is a newer growing area in the West Arsi Zonal Administration, bordering the Bale Mountains to the south, with Refisa a village within Nensebo Woreda.
THE PROCESS
Each farmer brings cherries to the washing station, where they're picked and floated for defects, washed, soaked for 5 hours, fermented for 72 hours, and dried on raised beds for 9-11 days until reaching a final moisture of 10.5%.
The 5-hour soak ahead of the 72-hour fermentation is the defining step — it's what builds the intense black tea florality behind this cup, with plum and peach stone fruit and a delicate lemon tea citrus running throughout.
THE CUP
Intensely floral — black tea aromatics lead, with stone fruit like plum and peach through the middle, and a delicate lemon tea citrus on the finish. Light-bodied throughout.
