INTRO September's first time featuring a coffee from Moata Raya — juicy, expressive, and aromatic. Juicy yellow plums and jammy pears meet bright citrus and aromatic bergamot, with a silky body and deep, long-lasting sweetness. In the cup: yellow plums, citrus, jammy pears, and bergamot.
THE PRODUCER Moata Raya is one of the most distinguished names in Ethiopian specialty coffee. He runs the Co Qua quality lab in Addis Ababa and his own export company, and serves as relationship and quality manager for Crop to Cup in Ethiopia. His career began as a technician for TechnoServe, training farmers and cooperatives around Agaro, before years spent working directly with growers across the country evolved into the work he does today. Alongside all of that, Moata has always held his own ambition to produce coffee at the calibre he's helped so many others achieve — this lot, from his family's farm in Awano Village, is a result of that ambition.
THE PROCESS The "lunar" in this honey process refers to nightly drying, using cooler temperatures and low sunlight to control fermentation. Ripe cherry is pulped 8 hours post-harvest with only 5% of the mucilage removed through a disc pulper — that partial mucilage removal is the honey portion of the process. The parchment then moves to drying beds nightly, spread and turned every two hours for 10-12 days.
The nightly, cool-temperature drying cycle is the defining step — it's what builds the deep complexity and long sweetness behind the yellow plum and bergamot character that define this cup.
