INTRO
A fermentation-driven lot from Elto Coffee in the highlands of Bensa. The 96-hour fermentation builds a cup of strong but still readable intensity. In the cup: blueberries, blackberries, and Earl Grey.
THE PRODUCER
Elto Coffee is the project of Eliyas Dukamo and Atiklit Dejene in the highlands of Bensa. Each brings solid experience producing exceptional coffees in Ethiopia, and they created Elto with the ambition of pushing quality standards by shining a light on Bensa's terroirs and more modern washing methods.
THE PROCESS
This lot is an Anaerobic Natural with a 96-hour fermentation. Despite the extended fermentation, it isn't meant to impress with an artificial burst of aroma. Instead, it acts as a revealer of texture.
The 96-hour anaerobic fermentation is the defining step. It builds the intense dark-fruit character while keeping the cup readable.
THE CUP
Dark fruit takes the lead at the start: a juicy blueberry, a bright blackberry, and black cherry, with a jammy feel that doesn't tip into excess sugar. The cup then evolves on the palate, and Earl Grey notes emerge gradually. Floral notes then bring freshness and recall the framework of the Ethiopian terroir.
Flavour Notes
🫐 Blueberries 🍇 Blackberries 🍵 Earl Grey
