Colombia — Carlos Estrella La Estrella Geisha (Honey)

Tastes Like — 🍒 Cranberry • 🍊 Orange • 🍈 Cantaloupe

DETAILS

  • Producer: Carlos Estrella
  • Sub-plots: La Jacoba and El Mirador
  • Region: La Unión, Nariño, Colombia
  • Varietal: Geisha
  • Process: Honey (48-hour anaerobic fermentation)
  • Drying: 20–22 days

INTRO
Colombia's new harvest is churning out gem after gem, and La Estrella is a delicious recent arrival. This coffee is honey-processed, but the process notes are extremely mild and the fruit flavours are abundant. In the cup: vibrant cranberry and orange, with subtle cantaloupe in the finish.

THE PRODUCER
Carlos Estrella created this lot from cherries harvested on two sub-plots of his farm, La Jacoba and El Mirador. These are the plots where he planted Geisha and other exotic varieties, the first in La Unión to do so.

THE PROCESS
The Honey process for this lot involves:

🍒 Hand-picking — ripe cherries picked by hand
⚙️ Mechanical pulping — cherries pulped mechanically
⏱️ Anaerobic fermentation — 48 hours, mucilage intact
☀️ Drying — 20–22 days

The 48-hour anaerobic fermentation with the mucilage left on is the defining step. It builds abundant fruit while keeping the process notes mild.

THE CUP
Fruit-forward and vibrant: cranberry and orange lead, with a subtle cantaloupe finish.

Flavour Notes
🍒 Cranberry 🍊 Orange 🍈 Cantaloupe

How it works The cherry skin is removed, but some of the sticky fruit layer stays around the coffee seed while it dries.

Typical influence The cup can balance washed clarity with natural sweetness, sometimes bringing a rounded body and stone-fruit or caramel-like flavours.

About this variety

Coffees reported as Gesha or Geisha are often prized for a delicate, tea-like cup with lifted floral aromas and bright fruit. Jasmine, bergamot and peach are common reference points, but each lot can express them differently.

Why this one is different
  • Colombia
  • Nariño
  • Honey

This is a Colombian expression, so it should not be expected to match a Panamanian Geisha exactly. The farm, growing conditions and lot notes matter more than the spelling.

Honey or pulped-natural processing often adds roundness and sweetness while keeping some of the fruit definition of a washed coffee.

Why the Gesha / Geisha name matters

Gesha and Geisha are interchangeable spellings, not proof of different varieties. The best-documented Panamanian Geisha and a Colombian research sample have matched T2722, but country and spelling do not prove that every farm planting is identical.

Classification Reported Gesha / Geisha

Technical lineage The reported name alone does not establish one genetic lineage. Confirmed Panamanian T2722 traces to Ethiopian landrace material.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
