Colombia — Jorge Rojas Finca El Jardín Chiroso, Lot #10 (Washed)

Tastes Like — 🫐 Blackberry • 🍊 Mandarin Orange • ✨ Ripe

DETAILS

  • Producer: Jorge Rojas
  • Farm: Finca El Jardín (one of his four farms)
  • Region: Tolima, Colombia
  • Varietal: Chiroso
  • Process: Washed (16-hour dry fermentation)
  • Lot: #10
  • Milled by: Desarrolladores de Café

INTRO
Jorge Rojas, a "menu superstar" for Prodigal, brings another gem with this just-landed Chiroso: a bit more "out there," a fun, fruit punch delight. Big blackberry and mandarin orange flavours with a ripe, saturated quality. It's a bit process-forward, but they love it. In the cup: blackberry, mandarin orange, and a ripe, saturated character.

THE PRODUCER
Jorge grew this Chiroso at Finca El Jardín in Tolima, one of his four farms. In reaction to the increasing complexity of novel processing techniques, he opted for a more traditional method with this lot. It was milled by Desarrolladores de Café and rushed to Prodigal to preserve quality.

THE PROCESS
The Washed process for this lot involves:

💧 Floating — floated to remove defects
🌱 Pulping — pulped immediately
⏱️ Dry fermentation — fermented without water for just 16 hours
🚿 Washing — fully washed
☀️ Marquesina drying — moved to marquesinas (covered drying structures), with regular rotation for even drying

The short 16-hour dry fermentation, followed by a full wash, is the defining step. It gives the lot its saturated fruit character without the heaviness of a longer ferment.

THE CUP
Fruit-punch bright and saturated: big blackberry and mandarin orange flavours with a ripe, juicy quality.

About this variety

Coffees reported as Chiroso are often associated with an aromatic, tea-like and bright cup. Florals, citrus and stone fruit are useful reference points in carefully produced lots.

Why this one is different
  • Colombia
  • Tolima
  • Washed

Colombian Chiroso is often bright and aromatic, bringing white flowers, citrus, red fruit and a tea-like or gently herbal finish. The reviewed washed lots from high elevations are especially clear and lively, while natural processing can make the fruit rounder and more expressive. Look to the listed process for the clearest clue to this bag.

Washed processing can make acidity and variety character easier to read, although fermentation and drying choices still matter.

A little background

Chiroso gained attention through producers around Urrao in Antioquia and is now seen in other Colombian regions. The reviewed coffees still lean strongly towards high-grown, carefully washed lots, where florals and vivid fruit stay sharply defined.

Identification note Chiroso is a Colombian producer name with strong genetic evidence linking tested material to Ethiopian landraces. Individual farm plantings are not assumed to be genetically identical unless their traceability confirms it.

Classification Colombian regional name

Technical lineage Published genetic research places tested Chiroso in an Ethiopian-only landrace cluster, rather than supporting the older idea that it was simply a Caturra mutation.

Variety is a guide, not a flavour guarantee. Lot notes are more specific.
