INTRO Jorge Rojas may hold the record for most-featured producer on the Prodigal menu — this barely-processed 16-hour washed Geisha features fresh, tart raspberry flavour, the dried fruit quality of raisin, and a cohesive creamy sensation. In the cup: raspberry, raisin, and creamy.
THE PRODUCER Jorge grew this Geisha at El Jardín, a 7-hectare farm in Tolima. As a reaction to the increasing complexity around novel processing techniques, Jorge has opted for a more traditional, minimal-intervention method with this coffee — letting the variety and terroir speak clearly rather than leaning on elaborate fermentation.
THE PROCESS Cherries were floated to remove defects, then pulped immediately. The coffee fermented without water for just 16 hours, was washed the next day, and dried in a deliberately slow process involving three rest periods on days 5, 9, and 13, for a total of 15 days. This extended drying time protects volatile aromatics. Friends at Desarrolladores de Café expertly milled the coffee before it was rushed to Prodigal to preserve quality.
The short 16-hour fermentation combined with the extended, three-pause drying schedule is the defining step — it's what preserves the delicate raspberry and creamy character while keeping the cup traditional rather than fermentation-forward.
