INTRO
Moonwake's first time sourcing from Jorge Rojas of Finca El Jardín. Jorge has become well known for pairing distinctive processing styles with exciting varieties, and this Chiroso shows what that combination can produce. Although primarily washed, the fermentation is carefully controlled to boost natural acidity without obscuring the clean, traditional washed character, giving a crisp, bright expression with the fruit at the centre. In the cup: mango, Bartlett pear, and strawberry.
THE PRODUCER
Jorge Rojas is a fourth-generation coffee grower whose journey began at 13, when his mother gave him the chance to work on the family farm. After learning everything about coffee production, he inherited part of his father's farm and bought a parcel of land from his neighbour. That plot became known as El Jardín.
THE PROCESS
Cherries are first flotation sorted, then fermented for 24 hours in their mucilage. They are then traditionally washed and dried for 15 days.
The carefully controlled 24-hour mucilage fermentation is the defining step. It boosts the Chiroso's natural acidity without obscuring its clean washed character, keeping the tropical mango at the centre of the cup.
THE CUP
Crisp, bright, and juicy: the first sip is full of tropical fruit, with big mango leading. As it cools, the fruit shifts toward strawberry, while a round Bartlett pear sweetness runs through and keeps everything soft.
